Spinach Stuffed Chicken Breast
Looking for a satisfying dinner but don't have a lot of time? Here's a recipe that comes together quickly and is a crowd-pleaser!
Ingredients
4 skinless and boneless chicken breasts
6 oz. cream cheese
1/3 cup parmesan cheese (you can adjust the amount of cheese based on your preferences)
1/4 cup feta cheese (you can adjust the amount of cheese based on your preferences)
1 cup baby spinach, chopped
Salt, pepper and paprika
Butter
Directions
- Cut a pocket in the chicken breast and then season with salt, pepper and paprika*
*You can add parmesan cheese to the outside if you'd like a more crusted chicken breast - In a small bowl, mix the cream cheese, parmesan and feta cheeses and baby spinach
- Fill each chicken breast with the mixture (pro tip, use toothpicks to help keep the chicken breasts together after you've placed the filling)
- In a pan, over medium heat, add butter
- Brown all sides of each chicken breast and then turn the heat down and finish cooking each breast until they reach an internal temperature of 165 degrees
