Breakfast Frittata

Breakfast just got a glow up! This quick and easy breakfast frittata is quick, hearty, and totally customizable.

Ingredients:

8 large eggs
1/4 cup milk (or cream for extra richness)
1 cup cooked sausage (pork, turkey, or plant-based — your pick!)
1 red bell pepper, diced
1 zucchini diced
1 pkg. button mushrooms
1/2 small onion, diced (optional but adds flavor)
1/2 cup shredded cheese (cheddar, Monterey Jack, or feta all work)
Salt & pepper to taste
1 tbsp olive oil or butter
Fresh herbs for garnish (like parsley or chives – optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the veggies.
  3. Heat olive oil or butter in an oven-safe skillet (like cast iron) over medium heat. Add diced onion and red bell pepper. Cook until soft (about 4–5 minutes).
  4. Stir in the cooked sausage and cook for another minute or two until heated through. Remove from heat.
  5. In a bowl, whisk together eggs, milk, salt, and pepper.
  6. Pour the egg mixture evenly over the sausage and veggie mix in the skillet. Sprinkle cheese on top.
  7. Transfer the skillet to the oven and bake for 15–20 minutes, or until the center is set and the edges are golden.
  8. Let it cool slightly, garnish with fresh herbs if using, slice it up, and enjoy!
